Glimmer & Shimmer Cake Pops

  • 1 box of yellow cake mix
  • 3 large eggs
  • 1-1/4 cup water
  • 1/3 cup vegetable oil
  • 2 tubs Over the Top Wispy White Buttercream Icing
  • 2-8” round cake pans or a 9×13 cake pan
  • Cake Pop Sticks
  • Shocking Neon Color Gel Set (We used Vivid Orange, Brilliant Blue and Radiant Green.)
  • Over the Top Non-Pareils, Edible Confetti and Sanding Sugars of your choice (We used Sweet Treat Edible Confetti, Really Orange and Ocean Blue Sanding Sugar, Rainbow Rush Non-Pareils, and Princess Mix decorations.)
  • Coordinating ribbon

Prepare cake mix and bake according to package directions. When cake is cooled, cut into large pieces. Place a cooling rack on top of a 9×13″ cake pan, this will catch the crumbs when you grate the cake.

1) Grate the cake into fine crumbs by running each piece across cooling rack.

2) Place the crumbs into a mixing bowl and add 1/2 tub of icing.

3) Mix thoroughly. Mixture should be moist enough to hold a ball shape.

4) Spoon even amounts of mixture and roll in palm of your hand to form a 1-1/2 inch ball. Set on a wax paper lined pan. Repeat with remaining mixture. Cover with plastic wrap. Chill for several hours in the refrigerator or place in freezer for about 15 minutes. Cake balls should be firm but not frozen. Spoon 1/2 tub of icing into a microwave safe bowl. Microwave at 10-15 second intervals until melted and has the consistency of syrup.

5) Insert Cake Pop Stick into cold cake ball and remove, making a hole.

6) Dip Cake Pop Stick 1/4 inch into melted icing.

7) Put iced stick into hole of cold cake ball. Repeat for all cake balls. Place into the freezer for 10 minutes until chilled.

8) Spoon second tub of icing into a microwave safe bowl. Add remaining melted icing. Microwave at 10-15 second intervals until melted. Divide into several small glasses, deep enough to submerge cake ball. Add 2-3 drops of color gel, mix well, adding one drop at a time until desired color is achieved. Dip chilled cake balls one at a time.

9) Immediately dip the cake balls into sugar or sprinkles or lightly sprinkle sugar on wet icing. Place on waxed paper to set.

Finish by tying ribbons on the sticks.
