Wonderful Whoopie Pies

  • 1 box of chocolate cake mix
  • 3 large eggs, 1/4 cup vegetable oil, 1/4 cup water (Note: recipe varies from package directions.)
  • 2 tubs Over the Top Wispy White Buttercream Icing or Chocolate Buttercream Icing
  • Over the Top Shocking Neon Concentrated Color Gels (We used Radiant Green.)
  • Over the Top Decorate It Starter Kit (We used small round tip #12, coupler and collar.)
  • Over the Top Keep Decorating Bags (one for each color choice)
  • Over the Top Even More Decorating Tips (We used large star tip #32.)
  • Over the Top sanding sugars, sprinkles or non-pareils
  • Ice cream scoop
  • Baking sheets
  • Parchment paper
  • Small dipping bowls
  1. Preheat oven to 350°F. Combine 1/4 cup vegetable oil, 1/4 cup water, 3 large eggs and cake mix. Mix for 2 minutes on medium speed.
  2. Using ice cream scoop, drop a scoop of cake batter onto parchment-lined baking sheet. Gently press until about 2″ in diameter. Make an even number for sandwiches, allowing space between for spreading while they bake. Bake for 10-12 minutes. Let cool completely.
  3. Scoop Wispy White Buttercream Icing onto flat side of one cake. Place another on top to make a sandwich. Lightly press down.
  4. Decorate by immediately dipping and rolling sides in sanding sugars, sprinkles or non-pareils. For a more decorative finish, fill a decorating bag with icing, attaching a coupler, collar and large star tip #32.
  5. Starting in the center of one cake (flat side up), pipe icing in a circle moving outward to the edges. Place another on top to make a sandwich. Lightly press down.
  6. To decorate tops: attach small round tip #12 to decorating bag. Drizzle, swirl or create your own designs.
  7. Immediately sprinkle with sanding sugars, sprinkles or non-pareils.
