Fast & Fabulous Layer Cake

  • 1 box of chocolate cake mix
  • 3 large eggs, 11/4 cup water, 1/3 cup vegetable oil
  • 2 8-inch round cake pans
  • Parchment paper
  • Baking sheet
  • Cake plate
  • Over the Top icing spatula
  • 2 tubs Over the Top chocolate buttercream icing
  • Over the Top decorate it starter kit (We used decorating bag, coupler, collar and small round tip #12.)
  • Wide cloth ribbon in color or pattern of your choice (length should wrap around cake)
  • Over the Top sugar beads (your choice)
  • Over the Top edible confetti (your choice)
  1. Prepare cakes according to package directions.
  2. After removing from oven, invert pans onto parchment-lined baking sheet. Inverting the layers will flatten the top of the cake. Cool for 10 minutes, then lift pans off cakes. Cool completely.
  3. Place first layer right side up onto cake plate. If needed, use a serrated knife to trim cake top to make level. Using spatula, spread a generous 1/2 cup of chocolate buttercream icing onto first layer. Place the next cake layer upside down on the first layer, tops together. Spread another generous 1/2 cup icing on top of cake. To smooth top, gently glide spatula over icing with long strokes.
  4. Make swirls in icing using the back of a spoon to create soft waves.
  5. Add a generous amount of icing to your spatula, holding spatula vertically, spread icing on sides of cake. For a smooth surface, slowly spin cake plate while holding spatula vertically against iced sides of cake. Set cake aside.
  6. Measure ribbon by wrapping around inverted cake pan. Leave an extra inch for overlap. Cut ribbon to size.
  7. To attach ribbon: use decorating bag fitted with small round tip #12. Fill with a small amount of icing and pipe a small dollop of icing half way on cake’s side where ribbon will be positioned, or spread a small dollop with spatula. This is the glue for ribbon.
  8. Press one end of the ribbon into the icing dollop. Hold end of the ribbon and wrap the remaining ribbon around the cake.
  9. Pipe or spread a dollop of icing onto the ribbon at the starting point.
  10. Press the end of the ribbon onto dollop and smooth together. Immediately decorate with sugar beads and edible confetti. (Remove ribbon before eating.)
